20 medium dates, chopped
1 cup walnuts (or pecans), coarsely chopped
1/2 cup sugar (or equiv. substitute)
2 tbsp vegetable oil
1 tsp bicarbonate of soda
1 cup boiling water
2 eggs
1 1/2 cups plain wholemeal flour
1 tsp vanilla
- Preheat oven to 165 C and grease a 10x20 cm loaf tin
- Place chopped dates and nuts in a bowl with sugar, oil and soda
- Pour over boiling water
- Stir in eggs, flour and vanilla
- Place in prepared tin
- Bake for 50-60 minutes
