Recipe for Date and walnut loaf

(Specially for P: it really is easy peasy, AND yummy!)

20 medium dates, chopped
1 cup walnuts (or pecans), coarsely chopped
1/2 cup sugar (or equiv. substitute)
2 tbsp vegetable oil
1 tsp bicarbonate of soda
1 cup boiling water
2 eggs
1 1/2 cups plain wholemeal flour
1 tsp vanilla

  1. Preheat oven to 165 C and grease a 10x20 cm loaf tin
  2. Place chopped dates and nuts in a bowl with sugar, oil and soda
  3. Pour over boiling water
  4. Stir in eggs, flour and vanilla
  5. Place in prepared tin
  6. Bake for 50-60 minutes

Thank you sis! Spen and I will love it, David won't eat id he doesn't really do fruit, oh well he lucks out then doesn't he!!!
